Ensalada de nopales con frijol

A refreshing way to enjoy nopalitos, this recipe is simple and easy to adjust to taste. My favorite way to get my veggies in while enjoying every bite. Our moms would be so proud.

Ensalada de nopal (cactus salad)

Ingredients

  • 7 cactus paddles, cooked and diced
  • 
2 roma tomatoes, diced
  • 1/2 cup red onion, diced
  • 
Small bunch of cilantro, chopped
  • 1 serrano pepper, finely diced
  • Juice of 1/2 lime, more to taste
  • 
1 whole avocado, cubed
  • 
1/2 cup whole beans, more to taste
  • 
Drizzle of olive oil
  • Salt and black pepper to taste

Garnish

  • 
Toasted chile de árbol, finely chopped

Directions

  1. To cook the cactus paddles, clean and dice them, then boil in salted water with a small bunch of cilantro and piece of onion for about 15-20 minutes until tender.
  2. Drain and rinse before using.
  3. Combine the cooked cactus paddles, tomatoes, onion, cilantro, serrano pepper, lime juice, avocado, and beans in a large bowl. Drizzle with olive oil and season with salt and black pepper to taste. Mix gently to combine.
  4. Garnish with toasted chile de árbol and serve with tostadas.
