
Ingredients
- 7 cactus paddles, cooked and diced
- 2 roma tomatoes, diced
- 1/2 cup red onion, diced
- Small bunch of cilantro, chopped
- 1 serrano pepper, finely diced
- Juice of 1/2 lime, more to taste
- 1 whole avocado, cubed
- 1/2 cup whole beans, more to taste
- Drizzle of olive oil
- Salt and black pepper to taste
Garnish
- Toasted chile de árbol, finely chopped
Directions
- To cook the cactus paddles, clean and dice them, then boil in salted water with a small bunch of cilantro and piece of onion for about 15-20 minutes until tender.
- Drain and rinse before using.
- Combine the cooked cactus paddles, tomatoes, onion, cilantro, serrano pepper, lime juice, avocado, and beans in a large bowl. Drizzle with olive oil and season with salt and black pepper to taste. Mix gently to combine.
- Garnish with toasted chile de árbol and serve with tostadas.
